Start by crumbling fresh paneer (cottage cheese) into small pieces.

Heat a tablespoon of oil or ghee in a pan. Add cumin seeds, followed by finely chopped onions, ginger, and garlic. Sauté them until golden brown.

Toss in finely chopped tomatoes and other available veggies and cook the vegetables until they soften and the tomatoes turn mushy.

Add turmeric powder, red chili powder, garam masala, and salt. Stir all the spices well.

Add the crumbled paneer to the pan, mixing it with the spiced vegetable mixture and stir well for 3-4 minutes.

6.)

If the bhurji looks too dry, add a splash of milk or water to make it slightly moist.

7.)

Garnish the paneer bhurji with freshly chopped coriander leaves. Serve hot in your tiffin box with roti, paratha, or bread.
