Start off by rinsing half cup of quinoa to remove dirt.
Heat oil in a pan on a medium flame and add half tablespoon of mustard seeds.
Once mustard seeds begin to sputter, add cumin seeds, urad daal and moong dal and keep stirring.
Then add other spices like ginger, chopped green chillies, garlic and onions.
Sauté veggies like peas, potatoes, carrots and capsicums for extra crunch.
Now add the quinoa to the pan and stir gently.
Once everything is mixed evenly, serve it or pack immediately for tiffin.
