To make rich and thick rabdi, you’ll need full-fat milk, sugar, cardamom and a few chopped nuts.
Start by pouring the milk into a heavy-bottomed pan. Bring it to a boil over medium heat.
Once the milk comes to a boil, reduce the heat and let it simmer for 20-30 minutes.
After the milk has reduced, add sugar to taste and also add cardamom to enhance the flavor.
Continue simmering the milk for another 10-15 minutes, stirring occasionally. This will allow the milk to thicken.
For extra flavor, soak a few strands of saffron in warm milk and add it to the rabdi.
Once the rabdi reaches your desired thickness, remove it from the heat and let it cool to room temperature.
