For extra fluffiness, don’t overmix the batter.
You’ll need flour, baking powder, sugar, salt, milk, eggs, and butter. Don’t forget your favorite toppings!
In a large bowl, whisk together 1 cup of flour, 2 teaspoons of baking powder, 2 tablespoons of sugar, and a pinch of salt.
In a separate bowl, whisk 1 cup of milk, 1 egg, and 2 tablespoons of melted butter until well blended.
Pour the wet ingredients into the dry ingredients. Stir gently until just combined; the batter should be lumpy.
Heat a non-stick pan or griddle over medium heat. Lightly grease with butter or oil.
Use a 1/4 cup measuring cup to pour the batter onto the hot pan. Space pancakes a few inches apart.
Cook the pancakes until bubbles form on the surface and the edges look set, about 2-3 minutes.
Carefully flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through. (Images credit: freepik)
