You’ll need coconut milk, sugar, eggs, salt, and vanilla essence.

In a pot, whisk eggs, sugar, coconut milk and salt until smooth. This helps the jam cook evenly without forming lumps

Place the pot on low heat, stirring constantly. Cook slowly to prevent the eggs from scrambling and keep the texture smooth.

Continue stirring as the jam thickens. It will slowly turn golden and creamy.

Once thick, stir in vanilla for extra flavour. This gives the jam a warm, fragrant aroma.

Remove from heat and let the jam cool completely. It will continue to thicken as it sits, making it easier to spread.

Once cooled, spread it on toast, pancakes, or crackers. Store any leftovers in a jar and refrigerate for later!
