1 cup suji, 1 onion, chopped, 1 tomato, chopped, ½ cup tomato puree, 1 cup mixed vegetables (carrot, capsicum, peas), 2 tbsp oil1 tsp ghee
½ tsp each: red chilli powder, turmeric, coriander powder, cumin seeds, 1 tsp mustard seeds, 6-7 curry leaves, Salt to taste, 1 tbsp coriander leaves, chopped
Add 1 cup of suji to a pan that has been heated. After a few minutes of dry roasting, put it aside.
Heat two teaspoons of oil in the same pan. Stir in the cumin seeds, urad dal, and mustard seeds, and allow them to sizzle.
Add the chopped onion and cook until it becomes tender. Add your mixed vegetables, including carrot, capsicum, and peas, along with some ginger and a chopped green chilli. Additionally, sauté them.
Add a chopped tomato and ½ cup of tomato puree now. Add salt, turmeric, coriander powder, and red chilli powder after cooking for two minutes.
Stir in 1 tsp of ghee after adding 3 cups of water and bringing to a boil. Simmer the pan with a lid on.
Remove the lid after a minute and add the roasted suji gradually in stages, stirring constantly to prevent lumps.
Add a few drops of lemon juice and some coriander leaves to finish. Your mouthwatering Masala Tomato Upma is prepared.
